I’m so excited to share a new series that I plan on featuring on the blog at least once a month. I’m calling it Behind the Recipe and I’m hoping that you’ll love it as much as I do! I’m taking recipes from family and friends (more on that later) and I’m allowing them to tell the story of the recipe and why they love it, what it means to them, etc.
My very first post in this series is actually a recipe that I love. It’s a recipe for Balsamic Pasta Salad and it’s incredible! I could honestly sit down and eat this every single day. No joke! This is not a recipe that I came up with, but it’s actually from my Sister-In-Law’s Mother, Terri. She actually got this recipe from one of her friends, and I’ve had both versions, but I still LOVE Terri’s version so much better.
There’s just something about the balsamic vinegar with the pasta and the creamy, saltiness of the Feta that I love! The good thing about this recipe is you can customize this recipe to your liking and it’s so simple to make!
I went over to Terri’s house and watched her make the Balsamic Pasta Salad and I took some pictures! It’s such an easy recipe to throw together when you’ve got somewhere to go and you need to bring an impressive dish! I hope ya’ll will enjoy it as much as I do!

I’m sure this series will be fun for you – especially since you love to cook & create things in the kitchen! This pasta salad looks delicious, but I would have to change it up a little for me. I’m not a big fan of olives or cheese, but other than that, it looks great! I do love a good pasta salad!!

I’m not a fan of a lot of these ingredients, so I leave out the olives and onions! I’ve often thought about adding in cucumber, red peppers and sun dried tomatoes!

Those additional ingredients would be great! I usually add cucumbers and peppers into mine. 🙂
