Today’s the day! If you remember last week, I posted this blog post about me starting the Paleo diet. Today is June 8th and that means today is go day. I ate foods this past weekend to remind myself why I want to start eating better. I had fast food, soda, greasy wings and fries. I had tacos and all of that good stuff. I wanted to remind myself what happens when I eat that type of food. I feel gross and disgusting. Today’s a new day.
I made a list of groceries that I needed to get and went crazy at the store. I’ve looked up recipes on Pinterest and other sites like Paleo Restart. I feel prepared and confident that I can do this and that I will actually be able to eat food that tastes like food and not cardboard. I’m excited to challenge myself. Not only to do this “diet” for 30 days, but to also challenge myself as a cook. I’ve got recipes ready to go that look amazing (and I’ve created a Pinterest Board that you can follow along and see some of the recipes I’m trying) and I’ve created a meal plan for the entire week, including snacks. I think the key to this is to be prepared and ready to go. So I made some foods ahead of time to help me stay on track.

What have I had so far? Not much because I just started today, but this morning I had an herb mushroom omelette. I fixed it last night and also made one for my husband as well. I’m normally the worst at breakfast and normally skip it for some reason, but today I was prepared and the omelette was really good. I just sautéed some mushrooms and onions with coconut oil and seasoned them with salt and pepper and added eggs, thyme, oregano (from my garden, yay!!) and chives to create the actual omelette. Delicious. For the rest of the day we’re having a salad with chicken, bacon and avocados and for dinner it’s zucchini noodles with a homemade Bolognese sauce. For snacks? I’m trying an Avocado Pudding that has me a bit frightened, but hopefully it will taste ok, ha.
Excuse the ugly toes that need a pedicure, but I did weight myself this morning. I’m actually keeping my scale in my basement because I tend to go “number crazy” and I don’t want to focus on the numbers this time. So once a week I’ll weight in. That’s it!
A lot of people don’t eat fruit on Paleo, some do. I’m eating some. I’m cutting back on a lot of it though and if I do eat fruit, I’m eating it with something else. Not eating it alone. I have gone back and forth about cutting it out completely, BUT I love fruit and I feel like if I’m giving up a lot of unhealthy junk, fruit is one thing that I’d like to be able to splurge on from time to time.
So I feel so much more prepared than I have with any other “diet” that I’ve ever done and I’m actually excited about trying new recipes and new ways of cooking. I’m hoping that I’ll find new ways of making some of my old favorites that much healthier. I, obviously, hope that this helps push some weight off of me, but my biggest reason for doing this diet is to get myself healthy. I want to eat whole foods and not just crap anymore. I feel like I’m done with the junk food and ready to get my body back to where I want it to be. Maybe a new me.

I kind of feel like I want to just keep these types of posts real and staging photos to be “instagram” worthy just isn’t a concern! End of rant….

Good Luck!! You’ll do awesome at it! I do my weigh-ins weekly also – it helps keep me focused on making that number smaller but without obsessing on it. I’m still doing my GL gets fit posts – I’m just not sharing them in the beauty group on facebook b/c I didn’t know if anyone would be interested. I’ll be crossing a year mark in the end of June though and blogging each week has really helped keep me motivated to keep going. I’m excited to follow along on your journey! 🙂

I think you’ll do great. You love to cook and experiment with food and that really helps. Hope you get the results you are looking for. Never a bad thing to try and get healthier!!
